Equipment

  • 1 slow cooker
  • 1 Mixing bowl medium
  • 2 forks for shredding

Ingredients

For the Chicken

  • 4 boneless skinless chicken breasts

For the Sauce

  • 1 cup soy sauce
  • 1/2 cup honey
  • 1/4 cup rice vinegar
  • 3 cloves garlic minced
  • 1 tablespoon ginger grated

For the Slurry

  • 1/4 cup water
  • 1/4 cup cornstarch

For Garnish

  • Sesame seeds
  • Sliced green onions

Instructions

Preparation

  • Season the chicken with salt and pepper. In a medium mixing bowl, combine soy sauce, honey, rice vinegar, garlic, and ginger. Place the chicken in the slow cooker and pour the sauce over it.
  • Set the slow cooker to low and cook for 4-6 hours. Halfway through, flip the chicken pieces for even cooking and sauce absorption.
  • In a small bowl, combine water and cornstarch to form a slurry. Add this to the slow cooker 30 minutes before serving to thicken the sauce.

Serving

  • Remove the chicken and shred it with two forks. Return the shredded chicken to the slow cooker to soak up more sauce. Serve hot, garnished with sesame seeds and sliced green onions.

Storage

  • Allow the chicken to cool completely, then store in airtight containers in the refrigerator for up to 4 days, or freeze for up to 3 months.
