Equipment

  • 1 baking sheet lined with parchment paper
  • 1 blender
  • 1 Mixing bowl large

Ingredients

Marinade Ingredients

  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 4 cloves garlic minced
  • 1 tbsp smoked paprika
  • 2 tsp salt
  • 2 tsp African bird's eye chili minced
  • 1 tsp black pepper

Chicken

  • 2 lbs chicken pieces skin-on
  • 1 tbsp fresh parsley chopped

Instructions

Preparation

  • In a blender, combine olive oil, lemon juice, garlic, smoked paprika, salt, African bird's eye chili, and black pepper. Blend until smooth.
  • Place chicken pieces in a large mixing bowl. Pour the marinade over the chicken, ensuring each piece is well-coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  • Preheat your oven to 400°F and line a baking sheet with parchment paper.
  • Arrange marinated chicken pieces on the prepared baking sheet. Bake for 45-50 minutes, turning halfway through, until the chicken is cooked through and the skin is crispy.
  • Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F.

Serving

  • Once out of the oven, let the chicken rest for a few minutes. Garnish with freshly chopped parsley before serving.

Storage

  • Store any leftover chicken in an airtight container in the refrigerator for up to 3 days. Reheat thoroughly before serving.
