Equipment

  • 1 Grill preheated to medium-high
  • 1 blender
  • 1 Mixing bowl

Ingredients

Marinade

  • 1 can chipotle peppers in adobo sauce
  • 3 cloves garlic minced
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp salt

Chicken

  • 2 lbs boneless skinless chicken thighs

Instructions

Preparation

  • In a blender, combine chipotle peppers, garlic, lime juice, olive oil, cumin, and salt. Blend until smooth.
  • Place chicken thighs in a large mixing bowl. Pour marinade over chicken and ensure each piece is thoroughly coated. Cover and refrigerate for at least 2 hours, or overnight for best flavor.

Cooking

  • Preheat your grill to medium-high heat. Lightly oil the grates to prevent sticking.
  • Remove chicken from marinade, letting excess drip off. Grill chicken for 6-7 minutes per side, or until internal temperature reaches 165°F.

Serving

  • Allow the chicken to rest for a few minutes before slicing. Garnish with fresh cilantro and lime wedges. Serve with your choice of sides.

Storage

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave before serving.
