Equipment

  • 1 slow cooker
  • 1 cutting board
  • 1 knife

Ingredients

Main Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 1 can 14 oz diced tomatoes
  • 1 large onion diced
  • 3 cloves garlic minced
  • 2 chipotle peppers in adobo sauce chopped
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup chicken broth

Instructions

Preparation

  • Dice the onion and tomatoes, mince the garlic, and chop the chipotle peppers. Season the chicken breasts with salt, pepper, and ground cumin.
  • Place the chicken breasts at the bottom of the slow cooker. Top with onions, garlic, diced tomatoes, and chipotle peppers. Sprinkle with oregano and pour the chicken broth over the mixture.
  • Set the slow cooker to low and cook for 6-7 hours or until the chicken is tender and easily shredded.

Serving

  • Once cooked, use two forks to shred the chicken directly in the slow cooker, mixing it well with the sauce.
  • Serve the chicken tinga with warm tortillas, over rice, or use as a topping for tostadas. Garnish with fresh cilantro and lime wedges.

Storage

  • Store any leftover chicken tinga in an airtight container in the refrigerator for up to 4 days.
  • Reheat the chicken tinga in a skillet over medium heat until warmed through, or microwave for a quick meal.

Notes

Pro Tips: For added depth of flavor, sear the chicken briefly in a skillet before placing it in the slow cooker. Adjust the spiciness by varying the amount of chipotle peppers.
Ingredient Substitutions: Use canned tomatoes if fresh ones aren't available. Smoked paprika can replace chipotle peppers for a milder heat.
How to Serve: Serve with rice, in tacos, or on tostadas. Garnish with fresh cilantro, diced onions, and lime wedges for added flavor.
Storage & Freshness: Keep leftovers in an airtight container in the refrigerator for up to 4 days.
Make-Ahead Tips: Prepare the ingredients the night before and refrigerate. In the morning, simply add them to the slow cooker and set the timer.
