Equipment

  • 1 smoker preheated to 225°F
  • 1 meat thermometer
  • 1 Mixing bowl

Ingredients

Chicken and Rub

  • 4 lbs boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 2 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp brown sugar
  • 2 tsp salt
  • 1 tsp black pepper

Smoking and Sauce

  • 1/2 cup apple cider vinegar
  • 1 cup BBQ sauce

Instructions

Preparation

  • Combine olive oil, smoked paprika, garlic powder, onion powder, brown sugar, salt, and pepper in a bowl. Coat the chicken breasts thoroughly with the mixture.
  • Set your smoker to 225°F, allowing it to reach the desired temperature before placing the chicken inside.

Smoking

  • Place the chicken breasts on the smoker grates. Smoke for 2-3 hours, basting with apple cider vinegar every hour, until the internal temperature reaches 165°F.

Serving

  • After resting, use two forks to shred the chicken. Mix with BBQ sauce and serve as desired.

Storage

  • Place any leftover chicken in an airtight container and refrigerate for up to 3 days. Reheat gently before serving.

Notes

Pro Tips: Use a meat thermometer to ensure accuracy. Let the chicken rest to retain its juices. Experiment with different wood chips for varied flavors. Smoke at a lower temperature for extra smokiness.
Ingredient Substitutions: Use chicken thighs for a richer flavor. Replace apple cider vinegar with lemon juice for a tangier taste.
How to Serve: Serve on buns with coleslaw, or use as a topping for nachos or pizzas.
Storage & Freshness: Store in an airtight container in the fridge for up to 3 days. Freeze for up to 3 months.
Make-Ahead Tips: Prepare the rub mixture in advance and coat the chicken, letting it marinate overnight for deeper flavor.
