Equipment

  • 1 smoker with applewood and hickory chips
  • 1 Mixing bowl large
  • 1 meat thermometer

Ingredients

Chicken and Marinade

  • 2 lbs boneless chicken breasts
  • 1/2 cup BBQ sauce
  • 2 tbsp olive oil
  • 1 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Sliders

  • 8 slider buns
  • 1 cup coleslaw
  • 1/2 cup pickles sliced

Instructions

Preparation

  • In a large mixing bowl, combine olive oil, smoked paprika, garlic powder, onion powder, black pepper, and salt. Add the chicken breasts and coat evenly with the marinade. Cover and marinate in the refrigerator for at least 2 hours.
  • Preheat your smoker to 225°F using applewood and hickory chips for a balanced smoky flavor.
  • Place the marinated chicken breasts on the smoker grates. Smoke for 1.5 to 2 hours, or until the internal temperature reaches 165°F, ensuring the chicken is fully cooked.
  • Allow the smoked chicken to rest for 10 minutes. Shred the chicken using two forks and mix with BBQ sauce until well coated.

Serving

  • Place shredded smoked chicken on the bottom halves of the slider buns. Top with coleslaw and pickles. Cover with the top halves of the buns and serve.

Storage

  • Store any leftover smoked chicken in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
