Ingredients
  

Chicken and Seasoning

  • 2 whole chicken halves
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder

Instructions
 

Preparation

  • Rinse the chicken halves under cold water and pat them dry with paper towels. Rub each half with olive oil.

Smoking

  • Set your smoker to 225°F. Add your choice of wood chips for smoking.
  • Place the chicken halves skin-side up on the smoker grates. Smoke for 2-3 hours, basting occasionally, until the internal temperature reaches 165°F.

Serving

  • Remove the chicken from the smoker and let it rest for 10-15 minutes. Carve and serve with your favorite sides.
