  • Remove giblets from the chicken cavity. Rinse the chicken under cold water and pat dry thoroughly with paper towels.
  • Season the cavity with salt and pepper. If using, stuff with lemon slices and onion quarters. Brush the skin with olive oil or melted butter, then season the outside with salt, pepper, garlic powder, and paprika.

Cooking

  • Preheat your oven to 425°F.
  • Place the chicken breast-side up on a roasting rack in a roasting pan. Roast in the preheated oven for 50-60 minutes, basting with pan juices halfway through.
  • Use a meat thermometer to check the internal temperature of the chicken. It should read 165°F at the thickest part of the thigh.

  • Remove the chicken from the oven and let it rest for 15 minutes before carving. This allows the juices to redistribute, ensuring juicy meat.
