Ingredients

Marinade

  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 2 tbsp lime juice

Chicken and Pineapple

  • 1 pineapple peeled and sliced

Instructions

Preparation

  • Combine soy sauce, brown sugar, garlic, ginger, and lime juice in a large bowl. Stir until sugar is dissolved.
  • Add chicken thighs to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 2 hours or overnight for best results.

Serving

  • Preheat the grill to medium-high heat. Remove chicken from the marinade and place on the grill. Cook for 6-7 minutes on each side, basting with the marinade.
  • Add pineapple slices to the grill during the last few minutes of cooking. Grill until caramelized and slightly charred.
  • Remove chicken and pineapple from the grill. Let the chicken rest for a few minutes before serving with the grilled pineapple.

Storage

  • Store leftover chicken and pineapple in an airtight container in the refrigerator for up to 3 days.

Notes

Pro Tips: For the best flavor, let the chicken marinate overnight. Use fresh pineapple for a natural sweetness that complements the savory chicken.
Ingredient Substitutions: If you prefer, you can use chicken breasts instead of thighs. Swap lime juice with orange juice for a different citrus flavor.
How to Serve: Serve with a side of coconut rice or a fresh green salad for a complete meal.
Storage & Freshness: Store leftovers in an airtight container and consume within 3 days for optimal freshness.
Make-Ahead Tips: Prepare the marinade and marinate the chicken a day in advance to save time on grilling day.
