Ingredients
  

Soup Base

  • 2 tbsp olive oil
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 lb chicken breasts cut into bite-sized pieces
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 6 cups chicken broth
  • 2 cups canned tomatoes with juices
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels

Garnish

  • 4 corn tortillas cut into strips
  • 1 avocado diced
  • 1/4 cup cilantro chopped
  • 1 lime cut into wedges

Instructions
 

Preparation

  • Begin by chopping the onion and mincing the garlic. Cut the chicken breasts into small bite-sized pieces.
  • Cut the corn tortillas into thin strips and set them aside for frying later.

Cooking

  • Heat olive oil in a large pot over medium heat. Add the onion and garlic, cooking until the onion is translucent.
  • Add the chicken pieces to the pot and cook until lightly browned. Stir in chili powder and cumin, ensuring the chicken is well coated with spices.
  • Pour in the chicken broth, canned tomatoes, black beans, and corn. Bring the mixture to a boil, then reduce heat and let it simmer for about 30 minutes.

Serving

  • In a frying pan with some oil, fry the tortilla strips until crispy. Drain excess oil on a paper towel.
  • Serve the soup hot, garnished with crispy tortilla strips, diced avocado, chopped cilantro, and a wedge of lime.
