  • 1 pound baby potatoes halved

  • 1 lemon juiced
  • Fresh parsley chopped for garnish

Instructions
 

Preparation

  • Season the chicken breasts with salt, pepper, garlic powder, rosemary, and thyme. Ensure an even coating for maximum flavor.
  • Heat a large skillet over medium-high heat and add olive oil. Once heated, add the chicken.
  • Cook the chicken for 5-7 minutes on each side until golden brown and cooked through. Remove and set aside.
  • In the same skillet, add the halved baby potatoes. Season with salt and pepper, and cook for 15 minutes, stirring occasionally.
  • Add optional vegetables like cherry tomatoes and bell pepper in the last 5 minutes of cooking the potatoes.
  • Return the chicken to the skillet with the potatoes. Squeeze lemon juice over the dish and simmer for 5 minutes.

Serving

  • Garnish with fresh parsley and serve hot for a delightful meal.
