Equipment

  • 1 large pot with lid
  • 1 Mixing bowl

Ingredients

Marinade

  • 1 cup plain yogurt
  • 2 tbsp ginger-garlic paste
  • 1 tsp turmeric powder
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander

Biryani

  • 2 cups basmati rice rinsed
  • 1.5 lbs chicken thighs cut into pieces
  • 1 large onion thinly sliced
  • 2 tbsp vegetable oil
  • 4 cups chicken broth
  • 1/2 tsp saffron threads soaked in 1 tbsp warm water
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

Preparation

  • In a mixing bowl, combine yogurt, ginger-garlic paste, turmeric, cumin, and coriander. Add chicken pieces and coat well. Let marinate for at least 20 minutes.
  • Rinse the basmati rice under cold water until the water runs clear. Set aside to drain.

Cooking

  • Heat oil in a large pot over medium heat. Add sliced onions and sauté until golden brown.
  • Add marinated chicken to the pot. Cook until the chicken is no longer pink and has started to brown slightly.
  • Stir in the rinsed rice and chicken broth. Add the saffron along with its soaking water. Stir well to combine.
  • Bring the pot to a boil, then reduce heat to low. Cover and let simmer for 25 minutes or until the rice is tender and the liquid is absorbed.

Finishing

  • Turn off the heat and let the biryani sit, covered, for 5 minutes. Garnish with fresh cilantro before serving.

Serving

  • Serve the biryani hot, accompanied by raita or a simple green salad.

Storage

  • Transfer any leftovers to an airtight container and refrigerate for up to 3 days.
