  • 1 1/2 lbs chicken thighs skinless and boneless
  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • Salt and pepper to taste

  • 1 cup frozen peas
  • 1 red bell pepper diced

Instructions
 

Preparation

  • Season chicken thighs with salt, pepper, and paprika. Rinse the rice under cold water until the water runs clear.
  • In a large skillet, heat olive oil over medium heat.

Cooking

  • Add the chicken thighs to the skillet and sear on both sides until golden brown. Remove and set aside.
  • In the same skillet, add onion and garlic, sautéing until fragrant.
  • Stir in the rice, coating it well with the oil and aromatics.
  • Return the chicken to the skillet, add chicken broth, and bring to a simmer. Cover and cook until the rice is tender and chicken is cooked through.

Serving

  • Let the dish rest for a few minutes. Fluff the rice with a fork, garnish with fresh parsley, and serve.

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of broth if needed to moisten.
