Equipment

  • 1 Grill preheated to medium-high
  • 1 Mixing bowl for marinade
  • 1 meat thermometer

Ingredients

Cowboy Butter Marinade

  • 1/2 cup unsalted butter melted
  • 3 cloves garlic minced
  • 2 tbsp lemon juice
  • 2 tbsp fresh parsley chopped
  • 1 tbsp fresh thyme chopped
  • 1 tbsp fresh chives chopped
  • 1/2 tsp red pepper flakes

Chicken

  • 2 lbs chicken thighs skin-on, bone-in
  • Salt and pepper to taste

Instructions

Preparation

  • Melt the butter in a saucepan. Add minced garlic, lemon juice, chopped herbs, and red pepper flakes. Stir to combine and let cool slightly.

Grilling

  • Preheat your grill to medium-high heat.
  • Remove chicken from marinade and place on the grill. Cook for 6-8 minutes per side, or until the internal temperature reaches 165°F.
  • In the last few minutes of grilling, brush the chicken with the remaining marinade for extra flavor.

  • Remove chicken from grill and let rest for 5 minutes. Serve with additional herbs and a drizzle of any remaining butter sauce.

Storage

  • Place any leftover chicken in an airtight container and refrigerate for up to 3 days.
