Equipment

  • 1 large pot with lid
  • 1 cutting board
  • 1 knife

Ingredients

Main Ingredients

  • 4 chicken thighs skinless and boneless
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/4 cup lemon juice
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 2 cloves garlic minced
  • 1 onion chopped
  • Salt and pepper to taste

Optional Additions

  • 1/4 cup olives sliced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup sun-dried tomatoes chopped

Instructions

Preparation

  • Combine lemon juice, garlic, oregano, salt, and pepper in a bowl. Add the chicken thighs and let marinate for at least 15 minutes.
  • Heat olive oil in a large pot over medium heat. Sear the chicken thighs until golden brown on both sides. Remove from the pot and set aside.
  • In the same pot, add onions and garlic. Sauté until onions are translucent and fragrant.
  • Stir in the rice, ensuring it is well coated with the oil and onion mixture. Add chicken broth and bring to a boil.
  • Return the chicken to the pot. Cover and reduce to a simmer. Cook for 20-25 minutes until rice is tender and chicken is cooked through.

Serving

  • Fluff the rice with a fork and serve the dish hot, garnished with optional additions like olives or feta cheese if desired.

Storage

  • Allow the dish to cool completely before transferring to an airtight container. Refrigerate for up to 3 days.

Notes

Pro Tips: Ensure the chicken is well marinated for maximum flavor. Cooking the rice with broth instead of water adds depth to the dish.
Ingredient Substitutions: Chicken breasts can be used instead of thighs for a leaner option. Brown rice can be substituted for white rice, though it may require a longer cooking time.
How to Serve: This dish pairs excellently with a side of Greek salad or steamed vegetables.
Storage & Freshness: Store in the refrigerator and consume within 3 days for optimal freshness.
Make-Ahead Tips: Prepare the marinade and marinate the chicken overnight for an even deeper flavor.
