Preparation

  • Remove the backbone of the chicken using kitchen shears. Flatten the chicken by pressing down on the breastbone. Pat the chicken dry with paper towels to remove excess moisture.
  • Rub the chicken with olive oil and season thoroughly with salt, pepper, smoked paprika, garlic powder, and onion powder. Optionally, add cayenne pepper, fresh herbs, lemon zest, or brown sugar.

Smoking

  • Preheat your smoker to 225°F and add your choice of wood chips. Apple or hickory are recommended for a classic smoky flavor.
  • Place the spatchcock chicken on the smoker, breast side up. Allow it to smoke for approximately 2-3 hours, or until the internal temperature reaches 165°F.

Serving
