Equipment

  • 1 Mixing bowl medium
  • 1 deep fryer or heavy-bottomed pan
  • 1 wire rack for draining

Ingredients

Marinade

  • 1/4 cup soy sauce
  • 1 tbsp grated ginger
  • 2 cloves garlic minced

Chicken

  • 1 lb boneless chicken thighs cut into bite-sized pieces
  • 1/2 cup potato starch
  • Vegetable oil for frying

Instructions

Preparation

  • In a medium mixing bowl, combine soy sauce, ginger, and garlic. Add the chicken pieces and toss to coat evenly. Cover the bowl and let the chicken marinate in the refrigerator for at least 30 minutes.
  • Remove the marinated chicken from the refrigerator. Heat vegetable oil in a deep fryer or large pan to 350°F. Coat each piece of chicken with potato starch, shaking off any excess.

Cooking

  • Fry the chicken in batches until golden brown and crispy, about 4-5 minutes per batch. Ensure not to overcrowd the pan to maintain oil temperature.

Serving

  • Transfer the fried chicken to a wire rack to drain excess oil. Serve immediately with your choice of dipping sauces.

Storage

  • Allow the chicken to cool completely before storing in an airtight container in the refrigerator for up to 3 days. Reheat in an oven to maintain crispiness.

Notes

Pro Tips: Ensure the oil is at the correct temperature for optimal frying. Double frying can increase crispiness.
Ingredient Substitutions: Use cornstarch if potato starch is unavailable. Chicken breasts can be used instead of thighs.
How to Serve: Pair with a fresh salad or steamed rice.
Storage & Freshness: Store in an airtight container and consume within 3 days.
Make-Ahead Tips: Marinate the chicken up to a day in advance.
