Equipment

  • 1 slow cooker 6-quart or larger
  • 1 Mixing bowl
  • 1 whisk

Ingredients

Main Ingredients

  • 4 boneless skinless chicken breasts
  • 1/2 cup sun-dried tomatoes chopped
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1 cup chicken broth

Creamy Sauce

  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp cornstarch
  • 2 cups fresh spinach

Instructions

Preparation

  • Chop the sun-dried tomatoes and mince the garlic. Season the chicken breasts with salt, pepper, and Italian seasoning.
  • Place the seasoned chicken at the bottom of the slow cooker. Add sun-dried tomatoes and garlic on top.
  • Pour the chicken broth over the chicken and set the slow cooker on low for 4 to 6 hours.
  • In a mixing bowl, whisk together the heavy cream and Parmesan cheese. Dissolve cornstarch in a small amount of water to form a slurry.

Serving

  • Once the chicken is cooked, remove it from the slow cooker. Stir in the cream mixture and cornstarch slurry to thicken the sauce.
  • Return the chicken to the slow cooker and add fresh spinach. Cook for an additional 15 minutes until the spinach is wilted.
  • Serve the Tuscan chicken hot, garnished with additional Parmesan cheese if desired.

Storage

  • Transfer any leftovers to an airtight container and refrigerate for up to 3 days.
  • Reheat in the microwave or on the stovetop over low heat until warmed through.
