Equipment

  • 1 large skillet
  • 1 cutting board
  • 1 knife

Ingredients

Chicken

  • 4 boneless skinless chicken breasts
  • Salt and pepper to taste

Sauce

  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Fresh basil for garnish

Instructions

Preparation

  • Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat.
  • Sear the chicken breasts on both sides until golden brown, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.

Cooking

  • In the same skillet, add minced garlic and cook until fragrant, about 1 minute. Add the sun-dried tomatoes and cook for an additional 2 minutes.
  • Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet. Reduce the heat to low and stir in the heavy cream and Parmesan cheese until well combined.
  • Return the chicken breasts to the skillet, covering them with the sauce. Allow the chicken to simmer in the sauce for 10-15 minutes, or until cooked through.

Serving

  • Garnish with fresh basil before serving. Enjoy with your choice of side dishes.

Storage

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop before serving.
