  • 1 whisk

Ingredients

Main Ingredients

  • 2 cups cooked chicken breast shredded
  • 4 cups cooked white rice
  • 2 cups broccoli florets
  • 1 can 10.5 oz condensed cream of chicken soup
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup milk

  • Salt and pepper to taste

Optional Add-ins

  • 1/2 cup chopped onions
  • 1/2 cup sliced mushrooms
  • 1/4 cup sliced almonds

Instructions

Preparation

  • Cook your chicken breast until fully done, then shred into bite-sized pieces. Alternatively, use pre-cooked rotisserie chicken for convenience.
  • Prepare your rice according to package instructions, ensuring it is fluffy and fully cooked.
  • Briefly blanch the broccoli florets in boiling water for 2-3 minutes, then drain and set aside.
  • In a large mixing bowl, combine shredded chicken, cooked rice, and broccoli. In a separate bowl, whisk together cream of chicken soup, sour cream, milk, garlic powder, salt, and pepper.
  • Pour the soup mixture over the chicken, rice, and broccoli. Stir until everything is well combined.
  • Transfer the mixture to a greased 9x13-inch baking dish and spread evenly. Sprinkle shredded cheddar cheese over the top.
  • Preheat the oven to 350°F (175°C). Bake the casserole for 35-40 minutes until the cheese is melted and bubbly.

Serving

  • Allow the casserole to cool for a few minutes before serving. Cut into portions and enjoy with your favorite side dishes.
