  • 1 lb boneless chicken breasts cubed
  • 2 cups broccoli florets
  • 8 oz pasta penne or fusilli
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • salt and pepper to taste

Instructions
 

Preparation

  • Cube the chicken breasts and chop the broccoli into florets. Mince the garlic cloves and set aside all ingredients within reach.
  • In a large pot, heat olive oil over medium heat. Add the chicken cubes, season with salt and pepper, and cook until browned and cooked through. Remove the chicken and set aside.
  • In the same pot, add minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the chicken broth and bring to a boil. Add the pasta and cook according to package instructions.
  • About 3 minutes before the pasta is done, add the broccoli florets to the pot.
  • Once the pasta is cooked and the broccoli is tender, reduce heat and stir in the heavy cream. Return the cooked chicken to the pot and mix well.
  • Allow the mixture to simmer for a few minutes until the sauce thickens slightly.

Serving

  • Serve the creamy chicken broccoli pasta hot, garnished with freshly grated parmesan cheese if desired.

  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of milk if needed to loosen the sauce.
