Equipment

  • 1 large skillet
  • 1 cutting board
  • 1 knife

Ingredients

Main Ingredients

  • 1 lb boneless skinless chicken breasts, diced
  • 1 cup long-grain white rice
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 bell pepper diced
  • 1 small red onion chopped
  • 2 cloves garlic minced

Seasonings

  • 1 tsp ground cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 2 cups chicken broth
  • 1 tbsp olive oil
  • Juice of 1 lime
  • Fresh cilantro for garnish

Instructions

Preparation

  • Cut the chicken breasts into bite-sized pieces. Season with salt, pepper, cumin, and chili powder.
  • In a large skillet, heat olive oil over medium heat. Add the seasoned chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
  • In the same skillet, add the onion, bell pepper, and garlic. Sauté until vegetables are softened, about 4 minutes.
  • Stir in the rice, ensuring it is well coated with the vegetable mixture. Pour in the chicken broth and bring to a boil.
  • Once boiling, reduce the heat to low, cover, and let simmer for about 15 minutes, or until the rice is tender and has absorbed most of the liquid.
  • Stir in the black beans and corn, and cook for an additional 5 minutes until heated through.
  • Return the cooked chicken to the skillet, stirring to combine with the rice and vegetables. Squeeze lime juice over the mixture and sprinkle with fresh cilantro.

Serving

  • Serve the skillet chicken burrito bowl hot, with your choice of optional toppings like avocado, cheese, or sour cream.

Storage

  • Allow leftovers to cool completely. Store in an airtight container in the refrigerator for up to 3 days. Reheat in the skillet or microwave before serving.
