  • 1 Mixing bowl large
  • 1 Tongs

Ingredients

Marinade

  • 1 cup plain yogurt
  • 2 tbsp lemon juice
  • 2 tbsp vegetable oil
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp paprika
  • 1 tsp garam masala
  • 1/2 tsp cayenne pepper
  • 4 cloves garlic minced
  • 1 inch ginger grated
  • 1 tsp salt

Chicken

  • 2 lbs chicken thighs skinless and bone-in

Instructions

Preparation

  • In a large mixing bowl, combine yogurt, lemon juice, and vegetable oil. Add the ground cumin, coriander, paprika, garam masala, cayenne pepper, minced garlic, grated ginger, and salt. Mix well to form a smooth paste.
  • Add the chicken thighs to the bowl, ensuring they are fully coated with the marinade. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

Serving

  • Preheat your grill to medium-high heat. Place the marinated chicken on the grill and cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F. Ensure you get a nice char on the outside for added flavor.
  • Remove the chicken from the grill and let it rest for a few minutes. Serve with lime wedges and fresh cilantro on the side.

Storage

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat thoroughly before serving.
