Ingredients

Main Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 large onion sliced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 8 slices provolone cheese
  • 8 hoagie rolls

Seasonings

  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning

Instructions

Preparation

  • Slice the bell peppers and onion into thin strips. Mince the garlic cloves.
  • Place the sliced vegetables and minced garlic at the bottom of the slow cooker. Lay the chicken breasts on top.
  • Season the chicken with salt, pepper, and Italian seasoning. Pour the chicken broth over the top.
  • Cover the slow cooker and set to low. Cook for 4-5 hours until the chicken is tender.
  • Once cooked, use two forks to shred the chicken directly in the slow cooker. Mix well with the vegetables and juices.

Serving

  • Slice open the hoagie rolls. Fill with the chicken and vegetable mixture. Top with a slice of cheese.
  • Place the assembled sandwiches under a broiler for a few minutes until the cheese is melted and bubbly.

Storage

  • Store any leftover chicken mixture in an airtight container in the refrigerator for up to 3 days.
  • To reheat, place the chicken mixture in a skillet over medium heat until warmed through.

Notes

Pro Tips: Use freshly baked hoagie rolls for the best texture and flavor. Toast the rolls lightly before assembling to prevent them from becoming soggy.
Ingredient Substitutions: Swap provolone for mozzarella or pepper jack for a different flavor profile. Add mushrooms for an extra umami kick.
How to Serve: Serve with crispy fries or a side salad for a complete meal. Add a dollop of mayonnaise or mustard for extra flavor.
Storage & Freshness: Store leftovers in the refrigerator and consume within 3 days for best quality.
Make-Ahead Tips: Prepare the vegetable and chicken mixture a day ahead and store in the refrigerator. Reheat and assemble sandwiches when ready to serve.
