Equipment

  • 1 large skillet with lid

Ingredients

Main Ingredients

  • 1 lb boneless skinless chicken breasts
  • 1 packet taco seasoning
  • 1 tbsp olive oil
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 can 10 oz diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro

Optional Add-Ins

  • 1/2 cup black beans
  • 1/2 cup corn kernels

Instructions

Preparation

  • Season chicken breasts with taco seasoning. Heat olive oil in a large skillet over medium-high heat. Cook the chicken until browned and cooked through, about 6-7 minutes per side. Remove and set aside.
  • In the same skillet, add rice and sauté for 2-3 minutes until slightly toasted. Add chicken broth and diced tomatoes with green chilies. Bring to a boil, then reduce heat to low, cover, and simmer until rice is tender, about 15-20 minutes.
  • Return chicken to the skillet, nestling it into the rice. Sprinkle shredded cheese over the top, cover, and let the cheese melt for about 5 minutes. Garnish with chopped cilantro before serving.

Serving

  • Serve hot, optionally topped with avocado slices or a dollop of sour cream for added richness.

Storage

  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stovetop until warmed through.

Notes

Pro Tips: Use freshly grated cheese for better melting. Let the chicken rest before slicing to retain juices. Adjust spice level with cayenne pepper.
Ingredient Substitutions: Use brown rice for a healthier option. Swap chicken breasts with thighs for more flavor.
How to Serve: Pair with a simple salad or steamed vegetables. Add a side of tortillas for a complete meal.
Storage & Freshness: Keep leftovers in an airtight container for up to 3 days. Reheat gently to avoid drying out.
Make-Ahead Tips: Prepare the chicken and rice separately and combine when ready to serve for quick meals.
