  • 1 pound chicken breast diced
  • 1 cup long-grain white rice
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels
  • 2 cups chicken broth
  • 1 cup enchilada sauce
  • 1 cup shredded cheddar cheese

Optional Add-Ins

  • 1 bell pepper diced
  • 1 jalapeño minced
  • 1/4 cup fresh cilantro chopped

Preparation

  • Dice the chicken breast into bite-sized pieces. If using additional vegetables, dice them as well. Measure out all your ingredients to have them ready before cooking.

Cooking

  • Heat oil in a large pot over medium-high heat. Add the chicken and cook until browned on all sides, about 5 minutes.
  • Add the rice, black beans, corn, chicken broth, and enchilada sauce to the pot with the chicken. Stir to combine.
  • Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20 minutes, or until the rice is tender and has absorbed most of the liquid.
  • Stir in the shredded cheddar cheese until melted and well combined.

Serving

  • Spoon the chicken enchilada rice into bowls. Garnish with cilantro and other toppings as desired.

Storage

  • Transfer any leftovers to an airtight container and store in the refrigerator for up to 3 days. Reheat in the microwave or on the stove.
