  • 2 tbsp olive oil
  • 1 lb boneless skinless chicken breasts, cut into cubes
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese

Preparation

  • Cut the chicken breasts into small cubes, approximately 1-inch in size. Season with salt, pepper, and garlic powder.
  • In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until browned on all sides, about 6-7 minutes. Remove from skillet and set aside.
  • In the same skillet, add rice and toast for 2 minutes, stirring constantly.
  • Add chicken broth to the skillet, return the chicken, and bring to a boil. Reduce heat to low, cover, and simmer for 18-20 minutes.
  • While the rice cooks, steam the broccoli florets until bright green and tender, about 5 minutes.
  • Once the rice is cooked, fold in the steamed broccoli and sprinkle with cheddar cheese. Cover and let the cheese melt for 2-3 minutes.

Serving

  • Fluff the rice with a fork, ensuring all ingredients are mixed well. Serve hot, garnished with additional cheese if desired.

  • Transfer leftovers to an airtight container and refrigerate for up to 4 days. Reheat in the microwave or on the stovetop before serving.
