Ingredients
  

Marinade

  • 1/2 cup soy sauce
  • 1/2 cup coconut milk
  • 2 cloves garlic minced
  • 1 tablespoon grated ginger
  • 2 tablespoons brown sugar
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1 tablespoon lime juice

Chicken

  • 1 pound boneless skinless chicken thighs, cut into pieces

Preparation

  • In a large mixing bowl, combine the soy sauce, coconut milk, minced garlic, grated ginger, brown sugar, ground coriander, turmeric, cumin, and lime juice to create the marinade. Add the chicken pieces to the bowl and ensure they are well-coated with the marinade. Cover and refrigerate for at least 2 hours to allow the flavors to infuse.
  • Remove the marinated chicken from the refrigerator. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

Serving

  • Preheat the air fryer to 400°F. Place the skewers in the air fryer basket in a single layer to ensure even cooking. Cook for 10-12 minutes, turning halfway through, until the chicken is fully cooked and slightly charred on the edges. Remove from the air fryer and let cool slightly before serving.
  • Transfer the cooked skewers to a serving platter. Garnish with fresh cilantro and serve with a side of peanut sauce for dipping. Pair with steamed jasmine rice or a cucumber salad for a complete meal.

Storage

  • Allow any leftover skewers to cool completely before storing them in an airtight container. Refrigerate for up to 3 days. To reheat, place the skewers back in the air fryer at 350°F for 3-5 minutes until warmed through.
