Ingredients
  

Chicken Satay

  • 1 pound boneless chicken thighs cut into bite-sized pieces
  • 2 tbsp soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 tsp curry powder

Peanut Sauce

  • 1/2 cup creamy peanut butter
  • 1/4 cup coconut milk
  • 2 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp chili paste

Instructions
 

Preparation

  • In a mixing bowl, combine soy sauce, brown sugar, garlic, ginger, and curry powder. Add chicken pieces and mix well. Cover and let marinate for at least 30 minutes in the refrigerator.
  • In a saucepan over low heat, whisk together peanut butter, coconut milk, soy sauce, lime juice, and chili paste until smooth and warmed through. Set aside.

Cooking

  • Set your air fryer to 400°F and allow it to preheat for about 5 minutes.
  • Thread the marinated chicken pieces onto skewers. Place in the air fryer basket, ensuring they are not crowded. Cook for 10-12 minutes, flipping halfway, until the chicken is cooked through and slightly charred.

Serving

  • Transfer the cooked skewers to a serving platter. Serve hot with a side of peanut sauce for dipping.

Storage

  • Place any leftover chicken and peanut sauce in separate airtight containers. Refrigerate for up to 3 days. Reheat in the air fryer or microwave before serving.
