Ingredients
  

Chicken and Marinade

  • 1.5 lbs boneless skinless chicken breasts, cut into cubes
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic minced
  • 1 tsp salt
  • 1/2 tsp black pepper

Vegetables

  • 1 red bell pepper cut into squares
  • 1 yellow bell pepper cut into squares
  • 1 red onion cut into wedges
  • 1 zucchini sliced

Preparation

  • In a large mixing bowl, combine chicken cubes, olive oil, lemon juice, garlic, salt, and pepper. Mix well to ensure the chicken is evenly coated. Let it marinate for at least 30 minutes.
  • While the chicken is marinating, prepare the vegetables by cutting them into uniform pieces. This will ensure even cooking.
  • Thread the marinated chicken and vegetables onto skewers, alternating between the chicken and different types of vegetables.

Cooking

  • Preheat your air fryer to 400°F for about 5 minutes to ensure even cooking.
  • Place the kabobs in the air fryer basket in a single layer. Cook for 12-15 minutes, turning halfway through, until the chicken is cooked through and the vegetables are tender.

Serving

  • Transfer the cooked kabobs to a serving platter. Serve immediately with your choice of dip or sauce.
